Quick and Easy Bengali special Yellow Pulao : -
This is a very tasty pulao recipe which I have made in pressure cooker to save time.You can make the same pulao without pressure cooker too in kadai / pan.
This is No Onion & No Garlic Pulao Recipe. It is quite easy to make and is very aromatic and flavourful. It is yellow is colour and hence the name basanti pulao where basanti in bengali refers to yellow colour.
This rice is specially made during puja / puja festivals or in special ocassions.
This pulao tastes great with both vegetarian and non -vegetarian dishes.
You can have this with vegetarian dishes like dum aloo and paneer.If it is for puja usually this pulao is served with dum aloo and paneer which are also made without onion and garlic.
It will also taste quite good with chicken and mutton curry too.

Ingredients for Basanti Pulao:-
Rice - 1 & 1/2 Glass
Milk - 1/2 Cup
Turmeric Powder - 1/2 Tsp
Ginger Paste - 1 Tbsp
Garam Masala Powder - 1/2 Tsp
Bayleaves -2
Cinamon - 2 Sticks
Cardamom- 4
Black Cardamom- 1
Cloves - 3/4
Salt To Taste
Sugar - 2 Tbsp
Oil / Ghee - 2 Tbsp
** Water - 2 Glass measured in same
rice glass
Method : -
Wash rice , drain and keep for 10 Mins
Add milk, turmeric powder,ginger paste & garam masala to the washed and drained rice.Mix everything well and keep for half an hour.
Heat pressure cooker & add oil / ghee 2 Tbsp.
Add bayleaves, black cardamom,green
cardamom,cloves & saute well.
Add the rice & sute nicely for 2
mins.
Add salt & sugar.
Add 2 glasses of water measured in
the same rice glass.
Cover pressure cooker lid & cook
on high flame till on;ly one whistle.
Wait till all the pressure is
released.
Open lid, mix rice gently.
Serve hot with your choice of vegetarian or non-vegetarian dishes.
